Slow Roasted Pulled Paleo Chicken Lettuce Wraps


Ingredients:
Organic Chicken Breasts
Onion
Garlic
Brown Sugar/Honey/Maple Syrup/Agave/Cocnut Sugar
Cumin
Organic Tomato Juice or Vegetable
Sea Salt
Black Pepper


Place Chicken Breasts in a Deep Pan and Add the Tomato Juice until liqud comes half way up chicken breasts.

Put diced onions and garlic over the top of the chicken.

Sprinkle the chicken with your choice of sweener, cumin, salt and pepper.

Cover with aluminum foil and place in oven at 350 for about three hours. 

Rotate the chicken in the liqud every 45 minutes until the chicken begins to fall apart then remove the foil to reduce the juices into a sauce. About 45 minutes

Pull out chicken and let cool and pick apart

When liqud is cool put in blender and puree then add to chicken

If chicken needs to be seasoned more season to taste 

Take Lettuce leafs and assemble with chicken, diced tomatoes, diced onions, and serve
